Warm Winter Arugula Salad

Today is supposed to be one of the worst snowstorms in ages near me, so I whipped up this Warm Winter Arugula Salad. When served warm, it will warm your soul (and stomach) with delicious goodness. The salad is the perfect combination of sweet and tart. The best part is, that it is so easy to make and comes together in almost no time.

TOTAL TIME: 50 minutes

SERVINGS: 4

INGREDIENTS: 4 oz. bag of arugula 1 cup cooked quinoa 1 recipe roasted sweet potato or yams 1/2 cup dried cranberries 1/2 cup cherry tomatoes halved 3-4 tablespoons olive oil 1-2 tablespoons balsamic vinegar or glaze Salt (to taste) Pepper (to taste)

RECIPE:

  1. Start by roasted your sweet potatoes and cooking your quinoa. While the quinoa and sweet potatoes or yams cook, make the dressing.

  2. Combine olive oil, balsamic vinegar/glaze, salt, and pepper. Whisk well with a fork or small whisk until everything is thoroughly combined.

  3. Just before you are ready to serve the salad, start assembling it. If serving the salad warm, make sure the quinoa and sweet potato/yams are warm. Add your leaves, tomatoes, cranberries, quinoa, and sweet potatoes to a salad bowl. Drizzle the dressing on top and serve.
