Greek Yogurt Beet Dip


Spring is here, and that means it’s time for vibrant spring food like this Greek Yogurt Beet Dip. Along with having the most gorgeous color (like ever) this dip also has the most amazing flavor. Since beets are a little sweet and yogurt is a little tangy, together these two elements balance each other out and create something out of this world. The dip is a little spicy, tangy, with just a touch of sweetness from the beets which ties everything together. It’s perfect for basically anything from snacking, to sandwiches, and toasts or if you’re like me and completely mesmerized by the color, you can just stare at it in awe. But in all seriousness, this dip is going to become a go-to for you this spring and summer since it is sooo easy and delicious to make!


To make this dip, all we do is toss the ingredients in a food processor or blender and blend until smooth. Season to taste, and voila! You can always go the extra mile to roast your own beets, but canned beets taste just as amazing in here.

TOTAL TIME: 10 minutes

INGREDIENTS:

15 oz. can red beets (drained, but not rinsed)

½ cup Greek yogurt

¼ cup extra virgin olive oil

3 garlic cloves

Lemon juice

2 tablespoons fresh parsley

2 teaspoons sumac

1 teaspoon paprika

1 teaspoon chili flakes

Salt (to taste)


METHOD:

  1. Add all of the ingredients to a food processor or blender and blend until smooth. Season with salt, sumac, and paprika to taste. Serve with sandwiches, toasts, vegetables, and chips.
