Vegan French Toast

French toast is by far my favorite brunch item. It’s my go-to brunch order. Now, I’ve tried making a lot (and I mean a lot) of different vegan French toasts recipes, but I’ve never found the right one, so I went on a quest to make the right one!

TOTAL TIME: 20 minutes (plus chilling)

SERVINGS: 4 toasts


INGREDIENTS:

4 slices, day old, 1 ½ inch thick Vegan Brioche slices

1 cup non-dairy milk

3 tablespoons flax seeds seeds

2 tablespoon brown sugar

1 teaspoon cinnamon

2-3 tablespoons vegan butter

Pinch of salt

1 teaspoon vanilla extract


METHOD:

  1. In a shallow bowl, combine milk, flax seeds, sugar, cinnamon, vanilla, and salt. Let it chill in the fridge for at least 20 minutes. This will allow the mixture to thicken.

  2. Remove the mixture from the fridge after 20 minutes and heat up a pan on low. Dip the bread in the mixture for a couple seconds on both sides. The bread should be fully saturated after.

  3. Spread vegan butter all over the pan. Let it melt and then place the bread on the pan and cook for 2-3 minutes on each side, or until golden brown.

  4. Serve with fresh berries and maple syrup on top.
