Overnight Oats of the Week


Overnight oats are my go to breakfast during the school week. They're filling, versatile, healthy, and easy. Since I'm not always a morning person, making my breakfast ahead of time makes my life so much easier. Overnight oats are super versatile and easy. All you do is add your base of oats, mix in your favorite toppings, flavors, and top with fruit, yogurt, granola, or nuts. Let it chill in the fridge overnight and in the morning you have breakfast. This recipe has 5 different recipes for the work week. You can totally personalize them and add whatever else you like. These recipes can also easily be made vegan by omitting the Greek yogurt as a topping. When making the overnight oats, you can either make them Sunday night for the rest of the week or the night before you want them for breakfast. It takes about 15 minutes to make your breakfast for the week. This way you can sleep in a longer in the morning. Sounds like a win-win situation to me.

INGREDIENTS and RECIPES:

Blueberry Pie Oats:

½ cup rolled or old fashion oats

½ non-dairy milk of your choice

¼ cup blueberries (plus more for topping)

1 teaspoon agave (add more/less depending on desired sweetness)

2 tablespoons Greek yogurt (for topping)

Granola (for topping)

Pinch of salt

  1. Combine oats and milk. Mix in blueberries, salt and agave. Top with yogurt, granola, and more blueberries.

Banana Bread Oats

½ cup rolled or old fashion oats

½ non-dairy milk of your choice

1 banana (divided)

¼ teaspoon cinnamon

Chocolate chips, cocoa nibs, nuts or blueberries (for topping)

Pinch of salt

  1. Mash half a banana and combine with the oats, milk, cinnamon, and salt. Top with other half of banana and toppings.

Chocolate Strawberry Oats

½ cup rolled or old fashion oats

½ non-dairy milk of your choice

1 teaspoon cocoa powder

1 teaspoon agave (add more/less depending on desired sweetness)

Cocoa nibs or chocolate chips

4 strawberries

Pinch of salt

  1. Finely chop 2 strawberries and mix them in with the oats, milk, agave, cocoa powder, and salt. Top with cocoa nibs/chocolate chips and sliced strawberries.

Apple Spice Oats:

½ cup rolled or old fashion oats

½ non-dairy milk of your choice

¼ of an apple

½ teaspoon cinnamon

Splash of vanilla extract

1 teaspoon agave

1 teaspoon chia seeds

Pinch of salt

  1. Finely chop the apple. Combine most of it with the oats, milk, cinnamon, vanilla, agave, and salt. top with more cinnamon, the rest of the apples, and chia seeds.

Vanilla Almond Crunch Oats:

½ cup rolled or old fashion oats

½ non-dairy milk of your choice

3 tablespoons sliced almonds

Splash of vanilla extract

1 teaspoon agave (add more/less depending on desired sweetness)

2 tablespoons Greek yogurt

Blueberries (for topping)

Pinch of salt

  1. Mix oats, milk, 2 tablespoons of sliced almonds, vanilla, agave, and salt. Top with 1 tablespoons nuts, handful of blueberries, and Greek yogurt.
