Apple Spice Pancakes


Mmm my mouth is watering thinking of these Apple Spice Pancakes. These pancakes are unreal. They are fluffy, flavorful, and so easy to make. If you make these pancakes for someone, they are going to be impressed with how delicious these are. These pancakes also happen vegan! This recipe is adapted from Love and Lemons' Banana Pancake Recipe.

TOTAL TIME: 30 minutes

SERVINGS: 6 large pancakes

INGREDIENTS: 1 1/2 cup whole wheat or all purpose flour 1/2 cup steel cut oats 1/2 cup apple sauce 1 flax egg (1 tablespoon flaxseed meal + 2 tablespoons water) 2 tablespoons melted oil or butter 2 tablespoons brown sugar 2 teaspoons baking powder 1/2 teaspoon baking soda 1 teaspoon cinnamon 1/4 teaspoon nutmeg 1/4 teaspoon ground ginger 1/4 teaspoon cardamom 3/4 cup (+ 2 tablespoons if needed) milk of choice 1 teaspoon vanilla Pinch of salt Cooking spray Maple syrup or agave (for serving) RECIPE:

  1. Begin by making your flax egg. Combine the water and flaxseed meal and set it aside. In a bowl combine the flour, oats, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, cardamom, and salt. I recommend turning on your stove onto a low flame and getting a pan/griddle hot now.

  2. Add in your apple sauce, oil/butter, brown sugar, milk, and vanilla. Mix just until everything is combined. The batter will be somewhat thick.

  3. Spray your pan/griddle and scoop heaping 1/4 cups of the batter and pour it onto the griddle. Make sure the flame is low. Spread out the batter a little using a spoon or measuring cup. Let it cook for about 2-3 minutes and then flip and cook for another 1-2 minutes or until golden brown. Repeat with the rest of the batter.

  4. Top with maple syrup or agave before serving.
