Sun-dried Tomato Pesto


This Sun-dried Tomato Pesto is really packing the flavor. It's spicy, salty, and sweet. It has basically been my right-hand-man these past couple of weeks. Anytime I'm looking for something to jazz up a sandwich or wrap, I catch myself reaching for this pesto. It adds tons of flavor and depth to any dish. It has the deepest and sweetest tomato flavor that is balanced out by the salty and spicy flavors.


This recipe takes almost no time to make. All you do is add all your ingredients to the food processor, blend, and then enjoy!


TOTAL TIME: 10 minutes YEILD: 2 cups


INGREDIENTS:

1 cup sun-dried tomatoes (make sure to pack them in)

1 cup extra virgin olive oil

1/4 cup Parmesan cheese (omit to make vegan)

2-3 garlic cloves

1/4 cup basil

Chili flakes (to taste)

Salt (to taste)

Pepper (to taste)


METHOD:

  1. Add all of your ingredients to a food processor and blend until it forms a paste. Add more salt, pepper, and chili flakes to taste. Serve with sandwiches, wraps, and more!
