Peach Caprese Salad

Caprese Salad is the quintessential summer salad. It’s fresh, easy to make, and makes the most of summer produce. It utilizes those summer tomatoes and basil. Now, I’ve said this before, and will say it a hundred more times, but peach season = the best season, which is why I like throwing some peaches into my summer caprese salads to make this Peach Caprese. Adding peaches adds a little something extra and a touch of sweetness to your salad. The peaches, tomatoes, and basil all create something out of this world when paired with creamy mozzarella cheese. The simplicity of this salad is what makes it special, which is why using the best quality produce is essential. You want to not only use the best produce, but also the best olive oil and balsamic vinegar you can because those flavors really shine through in this dish.

INGREDIENTS:

2 large peaches

1 pound heirloom or beefsteak tomatoes

8 oz. mozzarella ball

2-4 tablespoons extra virgin olive oil

1-2 tablespoons balsamic vinegar

Handful of Arugula (optional)

Basil (thinly chopped)

Salt (to taste)

Pepper (to taste)


METHOD:

  1. Begin by slicing the peaches, tomatoes, and mozzarella. Slice into ¼ inch thick peaches.

  2. Place peaches, tomatoes, and mozzarella slices on a serving plate. Drizzle over olive oil, balsamic vinegar. Season with salt and pepper to taste.

  3. Toss everything together with some arugula and top with a generous amount of basil.
