Parmesan Roasted Asparagus


Anyone an asparagus hater? Yeah I get it, ‘cuz me too. Well, that was up until I tried this Parmesan Roasted Asparagus. It’s basically roasted asparagus topped with crispy cheese. After trying this recipe, you won’t be able to say you are an asparagus hater. Although this recipe is easy and made with simple ingredients, it really hits all the right notes. It’s vegetables covered in cheese, which in my opinion is the only acceptable way to eat your vegetables.

INGREDIENTS:

1 1/2-2 lb asparagus

2/3 cup shredded parmesan cheese

1/3 cup bread crumbs

2 tablespoons butter

1 tablespoon olive oil

3 garlic gloves (roughly chopped)

Freshly ground black pepper (to taste)

Salt (to taste)


RECIPE:

  1. Preheat your oven to 400° F.

  2. Trim the ends off of your asparagus. In a small saucepan, melt your butter with your chopped garlic. Remove from the heat once your butter is fully melted. Toss the asparagus in the butter, olive oil, salt, and pepper. Then place on a lined baking sheet.

  3. Set a small handful of cheese to the side. Then in a separate bowl, combine your cheese, bread crumbs, more salt, and pepper.

  4. Place the cheese mixture on top of the asparagus and bake for 10-12 minutes. After 10-12 minutes, sprinkle the cheese you set aside on the asparagus and broil for 2-3 minutes until the cheese slightly browns and begins to bubble. Make sure to watch it carefully to prevent burning.

  5. Serve immediately with some freshly ground pepper one top.
