Green Goddess Dressing


Green Goddess Dressing is by far one of the best spring dressings. It’s full of herbs which makes it taste and feel super refreshing. It’s vibrant green color makes all food look and taste a million times better. It’s so versatile since it goes well on basically everything which is why it is so great to keep some on hand all spring and summer. You can throw it on a salad, grain bowl, roasted vegetables, sandwiches, and more. Get creative and enjoy with delicious sauce!

TOTAL TIME: 5 minutes

YIELD: 1 cup


INGREDIENTS:

¾ cup (tightly packed) combination of parsley and cilantro

3 tablespoons chopped dill

¼ cup Greek yogurt

½ cup extra virgin olive oil

1 medium jalapeño (optional)

Juice of a lemon

½ teaspoon capers (optional)

Salt (to taste)

Splash of water


METHOD:

  1. Add all of the ingredients to a food processor or blender. Blend until completely smooth. Add a splash of water if necessary to thin out the sauce. Season to taste and store in the refrigerator for up to 10 days.
