Green Chickpea Smash

Alright, let’s talk sandwiches, specifically this Greek Chickpea Smash sandwich. It’s spicy, tangy, herbaceous, easy, and loaded with flavor (and protein!). It comes together in a flash since all you do is toast your bread, smash some chickpeas with a little seasoning and a whole lot of herbs, and assemble! Since this sandwich is so easy, you can swap out *almost* all of the ingredients for something else!

INGREDIENTS:

15 oz. can chickpeas

1 mini cucumber (cut in rounds)

¼ cup jalapeño hummus (substitute with regular)

1 teaspoon dijon mustard

¼ cup cilantro and/or parsley (finely chopped)

2 tablespoons scallions and/or dill (finely chopped)

Lime/lemon juice to taste

Garlic powder (to taste)

Salt (to taste)

Pepper (to taste)

Spinach/arugula (optional for assembly)

4 slices of artisan bread


METHOD:

  1. Start by smashing your chickpeas with your mustard, herbs, lime/lemon juice, garlic powder, salt, and pepper.

  2. Then toast your bread and begin to assemble the sandwich.

  3. Place the slices of bread flat on a cutting board. Spread the hummus all four slices on the side facing up.

  4. Then, on two of the slices, divide the chickpea mixture and cucumbers. Add some spinach or arugula if desired. Take the other two slices of bread and press them on top.

  5. Serve immediately.
