Black Bean and Mango Salad

Black Bean and Mango Salad is my mom's go-to pot-luck summer salad. It's delicious, refreshing, and easy to make.

TOTAL TIME: 20 minutes

SERVINGS: 8


INGREDIENTS:

2 medium sized mangos

15 oz. can black beans

½ green bell pepper

½ red or yellow bell pepper

1 large jalapeño

½ red onion

Cilantro (to taste, you will want a good amount)

Juice of 1 ½ limes

Salt (to taste)


RECIPE:

  1. Drain the can of beans.

  2. Chop the mangos, peppers, jalapeño, and onion until they are about the same size as the beans. Chop cilantro.

  3. Mix everything together in a bowl and add lime juice and salt to taste.
