Balsamic Strawberry Ricotta Roast screams summer. It's the perfect summer toast. The sweetness from the strawberries and tartness from the balsamic contrast each other in the best way. The ricotta tones down the flavors while the arugula and basil add a delicious summer touch.

SERVINGS: 8 pieces
4 slices of artisan bread, cut in halves or thirds
5 large strawberries, diced
1 tablespoon balsamic glaze or 2 tablespoon balsamic vinegar
A couple tablespoons of ricotta
Handful of chopped basil
Handful of arugula
Salt (to taste)
Freshly ground black pepper (to taste)
Toast bread very well. Meanwhile, mix together strawberries, balsamic, basil, and salt.
Spread ricotta on the bread. Top with a couple arugula leaves. On top of the arugula, add the strawberry mixture. Top with some freshly ground black pepper and serve.
