Pasta al Zucchine or Pasta with Zucchini (sauce) is a simple and comforting pasta meal. It is perfect for when you're a little under the weather and want something warm.
TOTAL TIME: 45 minutes
8 oz. elbow pasta
1 large zucchini (grated)
2 tablespoons olive oil
3 garlic cloves (roughly chopped)
1 onion (diced)
¼ cup ricotta
¼ parmesan cheese
Salt (to taste)
Pepper (to taste)
Grate your zucchini and squeeze as much water out as you can using a kitchen towel. Once you squeeze out the water, leave the zucchini in the towel. Then start boiling heavily salted water for your pasta. Meanwhile, heat up 2 tablespoons of oil in a saucepan on a medium flame and add in the onions and garlic. Stir and cook until the onions are translucent and slightly brown then turn the heat off and set aside.
Pour the pasta into the boiling water and cook according to boxed instructions. Remove the pasta a minute before the box's instructions. Save 1 cup of pasta water, drain the pasta, and set it aside. Add the grated zucchini and all the pasta water to the pan with onions and garlic. Simmer on a medium flame for 20-30 minutes until the water cooks out a little. Season with salt and pepper to taste.
Add in the pasta in a couple minutes before most of the water evaporates and let it cook in the sauce. Mix well then add in ricotta and parmesan cheese. Add salt and pepper to taste and serve warm.
