Healthy-ish Apple Spice Loaf Cake


Sick of all things pumpkin spice? I got you, this Healthy-ish Apple Loaf Cake will fill you with all the fall spices and isn't pumpkin spice flavored. The cake itself is moist and delicious. It is deliciously spiced with all your favorite fall flavors. The topping is optional, but as always, highly recommended.

INGREDIENTS:

Loaf:

2 cups all purpose flour

1/2 cup date or brown sugar

1 cup unsweetened apple sauce

1 medium apple, diced

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon apple cider vinegar

1/4 cup olive oil

1/4 cup almond milk (or milk of choice)

1/4 cup Greek yogurt

1.5 teaspoons cinnamon

1/4 teaspoon ginger

1/4 teaspoon nutmeg

1 teaspoon vanilla extract

Pinch of salt

Topping:

2/3 cup oats

1/4 cup flour

1/4 cup brown sugar or date sugar

1 teaspoon cinnamon

1/4 cup butter or coconut oil (melted)

RECIPE:

  1. Preheat your oven to 350° F and line a loaf pan with parchment paper.

  2. Start by making your topping. Mix together all of the topping ingredients and set it in the fridge while you make the loaf.

  3. Combine the flour, brown sugar, baking powder, baking soda, spices and salt. Then add in the apple sauce, diced apples, apple cider vinegar, oil, milk, yogurt, and vanilla. Mix until just combined. Make sure not to over mix.

  4. Pour the batter into your loaf pan. Then top with the oat topping and bake for 45-55 minutes at 350°F. Let cool completely before cutting.
