Dark Chocolate Date Bites

For as long as I can remember, these Dark Chocolate Date Bites were waiting for me as an after school snack. They are the perfect treat to satisfy your sweet tooth when you aren't craving something super sweet. These bites on the healthier side since they are full of seeds and nuts which add incredible flavors and protein.

TOTAL TIME: 10 minutes

SERVINGS: 16-18

INGREDIENTS:

12-14 pitted dates

1 cup rolled oats

2 tablespoons chia seeds

2 tablespoons flaxseed meal

1/2 peanut butter

2 tablespoons melted chocolate chips

4 teaspoons cocoa powder

2 tablespoons maple syrup or honey

1/4 cup pepitas

Dash of vanilla

Pinch of salt


RECIPE:

  1. Add all of the ingredients into a food processor and pulse until a paste forms. Scoop out some of the paste and roll it into one inch ball. Repeat until you run out of your mixture. Drizzle on some melted chocolate if you desire. Chill for about 30 minutes before eating.

NOTES:

Store these in the refrigerator for up to 3 weeks.
