Cookie Butter Granola


We all know and love peanut butter granola, but I think it is time to introduce you to Cookie Butter Granola. For those of you who may not know what cookie butter is, it is basically a creamy and delicious spread made from Biscoff/Speculoos cookies. It is also known as Biscoff Butter. This granola is clustery, sweet, but not too sweet, and basically tastes just like cookie butter! I’ve kind of been on a cookie butter craze for the past couple of weeks. I recently rediscovered how much I love this stuff, so I have been wanting to incorporate it into every single thing I make. You can expect some more cookie butter recipes in the near future!

TOTAL TIME: 1 hour 15 minutes YEILD: about 4 cups of granola


INGREDIENTS:

2 1/2 cups old fashioned or rolled oats

1/4 cup flaxseed meal

1/4 cup chia seeds

3/4 cups melted cookie butter

1/4 cup coconut oil/melted butter

1 tablespoon maple syrup

1 teaspoon vanilla extract

1/2 teaspoon salt

METHOD:

  1. Preheat your oven to 325º F and line your baking sheet with parchment or a reusable baking mat.

  2. In a microwave-safe bowl, add your cookie butter, coconut oil/butter, vanilla, flaxseed and maple syrup. Microwave 30 seconds at a time until everything is melted. Stir every 30 seconds.

  3. In a separate bowl, add your oats, chia seeds, and salt.

  4. Pour the cookie butter mixture over your oat mixture and fold until everything is evenly coated.

  5. Pour the oat mixture into your baking sheet and spread it into an even layer.

  6. Bake for 1 hour and stir every 15 minutes.

  7. Remove from the oven and let it cool. Then break up any larger clusters into desired size and serve with some yogurt, oatmeal, or just enjoy it plain.
