Chocolate Chip Oatmeal Cookies

I am a self proclaimed oat fanatic, meaning if it has oats, I am 100% on board with it. From granola to cookies, I am all aboard the oat train. However, since I am morally opposed to raisins (yes, you read that correctly), the only oatmeal cookies I will eat are with chocolate chips. These are my easy, one bowl, quick Chocolate Chip Oatmeal Cookies that are totally raisin free. These cookies come together in no time and are perfect for all anti-raisins oat fanatics (and normal people too).


TOTAL TIME: 1 hour SERVINGS: 18 cookies


INGREDIENTS

1 cup flour

1/2 cup softened butter (or vegan butter)

1 1/2 cup old fashioned or rolled oats

1/3 cup brown sugar

1/3 cup granulated sugar

1 flaxseed egg (1 tablespoon flaxseed meal, 2 tablespoons water)

2 tablespoons milk of choice

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

3/4 cup-1 cup chocolate chips (or vegan chocolate chips)

1/2 teaspoon salt

RECIPE

  1. Preheat your oven to 325° F and line your baking trays with parchment or a reusable silicone baking mat.

  2. Make your flax egg. Then Cream together your butter and sugars for 2-3 minutes until light and fluffy. Beat in the vanilla, flax egg, and milk.

  3. Mix in your flour, oats, baking soda, baking powder, cinnamon, and salt.

  4. Fold in your chocolate chips. Place the dough in the fridge for 15-20 minutes.

  5. Scoop your dough into 1 tablespoon balls and place them on your baking sheets. Press down each cookie dough ball into a thick disk. Leave about 2 inches in between each cookie. Bake for 13-16 minutes.

  6. The cookies will look very soft when you remove them from the oven, so let them cool for 5-10 minutes before taking them off the baking sheet
